Chocolate Chocolate Nut Cookies
Straight from Ricky Lauren’s kitchen, they’re delicious on their own—and even better as an ice cream sandwich
Ingredients:
- 450g plain chocolate, chopped
- 60g salted butter
- 165g brown sugar, firmly packed
- 2 eggs
- 1 teaspoon pure vanilla extract
- 65g plain flour
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 300g walnuts or almonds, toasted and chopped
Instructions:
- Preheat the oven to 180°C.
- Melt half of the chopped chocolate with the butter in a bowl over a saucepan of simmering water. Let cool.
- Mix in the sugar, eggs, and vanilla. In a separate small bowl, sift the flour, baking powder, and salt. Stir the dry ingredients into the melted chocolate mixture. Stir in the remaining chopped chocolate and nuts. Cover the mixture and refrigerate for 1 hour.
- Lightly butter two large baking sheets. Drop the batter in 2-tablespoon measures per cookie to make 2 dozen. Press down gently on each cookie.
- Bake until they start to crack, 12 to 13 minutes. Let the cookies cool completely on the sheet.
